Holiday Weekend, Part Two

Are you tired of bringing brownies or cookies to every picnic? Well, I have the dessert solution for you! My favorite auntie gave me this recipe a few years ago, and I have been faithfully delighting picnic go-ers everywhere with it! It is simple, quick, and absolutely delicious. Go ahead, give it a try, you will not be sorry!

Eclair Cake

1 cup boiling water
1 stick butter
1 cup flour
4 eggs
2 small packs vanilla instant pudding
8 oz cream cheese, softened
2.5 cups milk
large container of Cool Whip
bottle of Magic Shell

Melt your stick of butter in the boiling water and set aside to cool. Once luke warm, add flour and stir. Add four eggs and mix well. Spread into a 9×13 ungreased glass pan and bake at 400 for 25 minutes. (When you pull the pan out of the oven, the pastry will look ugly, bumpy, lumpy. It is OK!!) Leave it alone and let it cool completely.

Mix together in a bowl the vanilla pudding, softened cream cheese, and milk. Beat this thoroughly, until completely smooth. (I have used whole milk, 2% milk, and 1% milk in this recipe, and I cannot tell a significant difference. Use whatever you are comfortable with.) Spread the mix onto the cool pastry crust. Next spread on the Cool Whip (low fat, low sugar, any type of Cool Whip is fine). Take your Magic Shell and drizzle on the top and refrigerate immediately. Let cake chill for 2 hours or more. (A note on the Magic Shell: You will find this in the grocery store wherever ice cream toppings are kept. You must shake it like nobody’s business before you use it, otherwise it will be too watery. And as far as how much to drizzle onto the cake, use your judgement. I use the whole bottle, which pretty much coats the cake, but that is how I like it!)

Please try this one, it truly is one heck of a summer cake. You will be amazed at how this really does taste like an eclair.
