Holiday Weekend, Part One

So today is July 1st, and there is a glorious holiday weekend so close now that I could reach out and touch it! July has long been one of my favorite months: the fourth was my Grandpa’s birthday, it is the month of my wedding anniversary, and my birthday. It also ushers in hot and sultry weather, which I love any day of the year! And it means picnics, and do I have some yummy recipes to pass along to you!

This first recipe is for a summer side salad, but it is so good and filling, that it can easily be an entire cold meal on a hot summer night. It contains no mayo, which is good in this weather! If you happen to try making it, let me know what you thought of it…

Salami Pasta Salad

one pound cooked macaroni
1/2 lb thick sliced salami
1/2 cup fresh parsley, minced
4 green onions, sliced
1/2 cup olive oil
1/4 cup red wine vinegar
1 tsp oregano
1 tsp basil
1 tsp salt
2 garlic cloves, minced
1/2 tsp black pepper
1/2 cup shredded parm

Cook your pasta to al dente, and run cold water over it to stop it from cooking. I like to use campanelle in this recipe, as it holds the dressing and herbs better than thinner styles. Cut your salami into small chunks (be sure to order the salami cut into 1/4 inch chunks and not slices). Add your minced parsley and the sliced green onions. Now, make your dressing from the remaining ingredients and toss with your pasta. Sprinkle the top of the salad with extra parm if desired. This salad looks very pretty when presented in a clear glass or acrylic bowl. Serve your salad cold, giving a quick stir before putting out on the table.
